Mmmmmmm, TACOOOSSS

Ok, not actual tacos as I am going pretty much carb free to lose the last of my weight. Taco filling more like. :) MMMmmmmmm!

I saw a post on Obesityhelp.com in the RNY forum about another bloggers post about a taco casserole they make pretty regularly and instantly my mouth was watering! So, I stopped at the market on the way home today and picked up the following items (not all the same as the other blogger's, I couldn't remember it exactly):

2 pounds 90% lean ground beef
1 summer squash
1 zucchini
1 yellow onion
1 can black beans
1 can fat free re-fried beans
2 bags mexican blend cheese
Romaine lettuce
small tub sour cream (for my honey)
1 plain greek yogurt
1 jar medium salsa
2 packages taco seasoning mix


I chopped the onion, squash and zucchini and sateed until soft in a pan with cooking spray. Transfer to bowl.

In the same pan, break up the beef and cook until no longer pink. Drain and return to pan with 3/4 cup water and two packages of taco seasoning. Mix well and then add your beans and veggie mixture. Move to baking dish. I sprinkled cheese on top of that and then tried to spread the refried beans (not a great idea by the way) but it still came out tasty, so who cares. Then I topped that with the other bag of cheese. Baked at 375 for 10 minutes (until cheese is all melty-YUM). Take out of the oven and allow to cool for a few minutes.





Now, I eat just the casserole with some of the greek yogurt and salsa, but you can take it and put it in a taco shell or soft taco shell. That's what I did for my fiance and I put some shredded lettuce, sour cream and salsa on them for him. He LOVED IT!!!

Today in my pouch....

I figured since I have been keeping things pretty regular, you all might benefit from what I have been eating each day. So, each day, I make a whopping protein shake. Today's shake is chocolate-coconut-strawberry. Oh, sooooo good! I am all about that right now. It will take me until about 10am to drink it all (it's 7:00 now). For lunch I have aloft over cheeseburger(no bun) that I will eat with some broccoli. Then for my mid to late afternoon snack I have 2 oz turkey breast, 1 oz American cheese, half cup chopped tomato topped with my Greek dressing(I will post that recipe another day, it was nummy!). So far, that's what I have planned. Oh, and I have a coffee each day with sf French vanilla coffee mate! Num!! Need my caffeine... Until later all!

Yummy shake!!!

So this morning I whipped up another shake, nothing too different. It's chocolate raspberry. I made mine with a cup of 1% milk, a scoop of the dessert chocolate fudge protein, two splenda, a half cup frozen raspberries and two tbsp of sf raspberry syrup. Yum yum!!

I scream, you scream!

ICE CREAM! It's my favorite time of year as the ice cream shop down the street from my home causes complete side road parking AWESOMENESS! Urgh!!! Can't drive down my street for goodness sake!

On the other side of this, I am in fact a HUGE ice cream fan... I love the icey creamy goodness of it... Aw yea!

I wanted to start making protein ice cream, as many other post-ops do, so I went out and bought me a beautiful ice cream maker and got to work!

Isn't it PRETTY??!!



I think so. I made some plain ol chocolate to start off the season. (Hey, just because I waited until now doesn't mean you can't have it all year round, I just get mega cravings around summer time).

Here are the ingredients:

2 cups 1% milk
2 scoops Dessert Chocolate Fudge Protein Powder
2 tbsp SF Torani syrup (I used chocolate)
2 tbsp Cocoa Powder

I blended it in the blender and poured it into the frozen bowl of the ice cream maker. It was finished mixing in 18 minutes, not too shabby! Still soft (like soft serve-ish), but I like it scoopable, so I put it in tupperware and it's in the freezer getting colder as we speak.

I can't wait to dig in!!!! :-)

Taste test day!

Hello, welcome to MONDAY! Blech. Anyway, I decided to try a new recipe today from another blog...

Love this recipe, and I tried it with the Portabello Mushroom caps. DELISH...



and beautiful, I might add! Filling to boot, I am definately making this one a ritual meal~

As for the rest of the day:

Breakfast: Protein/Click Shake

Lunch: 3 oz Pork Tenderloin and 1/2 cup steamed broccoli

Snack: 2 oz Roast turkey breast deli slices, 2 kraft singles and lettuce to wrap them up in. YUM

Supper: Mushroom caps and 1/4 cup mashed potato

Snack: Not sure yet.

Dinner for Cinqo de Mayo!

Yea, not so mexican, but I loved it!!

My fiance wanted a steak and mashed potatoes for dinner, so I bought him a rib eye and found some thin sliced steaks that I grilled up for myself (one for dinner and one for lunch tomorrow...) The steaks weighed about 2.5 oz each after grilling, respectively. I paired my steak with 4 oz chopped tomato and 1.5 oz mashed potato. YUM!!!


Here are the rest of my eats for the day:

Breakfast: Scrambled eggs and fruit
Lunch: Gortons Salmon filet and 1/2 cup of steamed broccoli, half cup cucumber
snack: 2 oz Thin sliced roasted turkey breast and one slice kraft singles (I know, not the best choice but I have a weakness for that glop).
After dinner snack: no idea yet...

Testing my new iPhone ap, sorry!

Ok, so sorry, I am testing this thing out!

I got an iPhone!!!


Now I can post all the time, well relatively often anyhow! I have been incredibly busy at work lately, lots of overtime and such. But I took the time this morning to take a pic of what I am bringing to work today for eats! It's gonna be a tasty day! I have a triple thick chocolate strawberry protein shake, a pineapple chobani in the fridge at work (not pictured), a turkey meatloaf mini muffin with broccoli for lunch and some ham, provolone cheese and cucumber for an afternoon snack. Yum, yum! I am being treated to sushi this evening, I am going to see if they have some rolls made with veggies instead of rice, wish me luck!
