Another pizza night, but oh, so good!

Let's face it, pizza night is practically a necessity in America. Families do it almost every Friday night, it's perfect after a big game, or during one for that matter. I am a HUGE fan of pizza, and I am sure it shows in my blog!

So, I have more lovely food porn for you!

This one is made with fresh mozzarella and plum tomato slices. I also threw some thin sliced garlic (sorry hun!) and pizza sauce. Check it out!



Now the only thing with fresh tomato and mozzarella is the water. The tomatoes run when heated and so does the cheese, so I had a little wetness to my pizza. That doesn't mean my tortilla got soggy, nope! I toast the tortilla prior to adding the toppings and this helps a lot! So, I advise doing that next time you have one.

Breakfast: a second try at the Pineapple-Chocolate-Coconut shake. Better today.

Here's how I made it:

8 oz milk
1 scoop Dessert Protein Chocolate Coconut Flavor
1/2 cup frozen pineapple
1 packet splenda
8 ice cubes

I blend everything but the ice first, then add the ice and blend a good 2 to 3 minutes. YUM!

snack: Pirates Booty (love this stuff!)
Lunch: 1 cup chicken queso
snack: crap grab-really bad day at work today people-6 small cookies-ugh!
Supper-yummy pizza above
snack-more than likely a no sugar added fudgecicle

Cheeseburger Taco


I love me some grillin' goodness!

Black angus. That's all I can say. B-L-A-C-K ANGUS! Ooooh, YUM!

It's easy:

Sprinkle some adobo seasoning on the burger, throw it on a sizzling hot grill and leave for 3 minutes. Flip and leave for 3 more minutes (this of course depends on thickness-mine was about 1/4 inch thick). Add cheese and turn off heat. Cover to allow wonderful melting to commence. Remove from grill and cut in half to layer on a small flour tortilla and add your favorite toppings. Mine was fresh sliced tomatoes and ketchup. Pickle on the side.

Enjoy.

Oh, yeah, the rest of the day went like this:

Breakfast: Pineapple-choco-coconut protein shake (pretty good if you ask me, but not perfect yet, so no recipe yet-soon to come though).
Lunch: Queso Chicken (like Cleopatra Nik's only a lil different. This recipe is to come soon also)
Snack: crap grab of the week-1/2 cup mac n cheese
Supper: See deliciousness above!
snack: 6 triscuits and 2 lite Swiss laughing cow cheese wedges.

Worked out like a mad woman today. GO ME!

Pizza night!

Had another great food day today, and a little re-planning when it came to dinner... I had every intention of having a lovely grilled hamburger topped with cheese and a side of some crunchy veggies, then, Thor the GOD OF THUNDER came around. No grilling. I am sorry, I know I should be brave and all, but honestly standing out there holding a metal spatula waiting for meat to cook with thunder rumbling in the background. NOPE! NOT HAPPENING!

So, I went to my faithful and had me a lovely mini pizza topped with onions and mushrooms. NUM NUM!



It's a small flour tortilla topped with pizza sauce, pizza blend cheese (cheddar and mozzarella), chopped mushrooms and onions. I heat the tortilla in toaster oven for about 3 minutes, then add the toppings and cook until all melty.

As for the rest of my day,

Breakfast: Snickers Protein Shake (this kind of came out ok. I made one for a friend also, she loved hers. I thought mine was a tad too sweet.)

Snickers protein shake:

1 cup 1% milk
1 scoop Chocolate protein powder
1 heaping tbsp peanut flour
3 tbsp SF Caramel Torani Syrup
1 tbsp SF Chocolate Sauce

Blend together. Then add 8 ice cubes and blend for 3 minutes. Don't get me wrong, it was good, just a bit sweet for me. I may only put 2 tbsp of the caramel syrup in mine next time. Let me know what you think if you try it. :)

snack: 21 oz cheddar cheese, 6 triscuits
Lunch: the LAST of my rice, beans and cheese (finally-I really get sick of the same thing everyday. I really need to learn to freeze. UGH, lol.)
snack: slice cheese and 1 oz pirates booty (post workout)
Supper was the pizza
Snack-dunno. Possibly a nectar protein drink. Possibly nuts...

I did start something in the crock pot for lunch for tomorrow that I am really excited about. Pics and recipe coming tomorrow!

Pork Chops n Gravy

Today I thought I would attempt something different with pork chops. To me, they suck, to be quite honest. My fiance likes Shake n' Bake Pork Chops. I don't.

With that being said, there's not much else one can do with something you don't care for besides smothering it in gravy, and that's what I did!

Here's what's for dinner:

Ingredients:

2 pork chops
6 green onions chopped
2 tbsp olive oil
a few dashes Emirills 1 can cream of mushroom soup
1/2 cup 1% milk

Shake some of the seasoning on both of the pork chops and set aside. Heat oil in pan and add onions. When the onions have softened, turn up the heat a little and add the pork chops (to create a kind of sear on one side). Cook on that side for about 3 minutes. Turn over and cook for 2 more minutes. Add can of soup and milk lower heat to simmer for about ten more minutes.

It may not look pretty, but I enjoyed it! My fiance on the other hand only ate his veggies. He's a shake n' bake child at heart. Blech.



As for the rest of my day, I had:

Breakfast: Pina colada protein shake
snack: packet oatmeal
Lunch: Cup of rice, beans and cheese
Snack: Ciobani and cereal
Post workout: Nectar Crystal Sky drink
Supper: Pork chop and sauteed veggies
snack: Will be one of the last slices of my cheesecake. MUST MAKE AGAIN! Oh, so GOOD!

Anyone else watch Anthony Bourdain? I am obsessed! I love seeing all the different foods he eats! I actually get a lot of ideas from that show... Check it out if you haven't. :)

BEWARE the Crap Grabs

Ugh. I was having a perfect food weekend, then I lacked on preparing for supper. Here's how my early afternoon conversation went with my Fiance:

Me: So, what do you think you want for supper?
Him: Dunno.
Me: Me either.
Him: Well, let's see what we want in a little while.
Me: Yea, I am not hungry, so I can't think of anything right now.
Him: Ok

4 hours later...

Me: So, do you know what you want for supper now.
Him: Nope. But I am hungry. Want to go out?
Me: Not really.
Him: What have we got?
Me: It's all frozen.
Him: I think I will order out.
Me: Ok. I will eat something here...

So, I go into the kitchen; at this point hungry; and grab the easiest, FIRST thing I see.

Ready?

A Bon Appetit (the mac n cheese). UGH! I didn't plan, and THIS is what happens. I mean, I didn't eat too much today, so I am not over my calories, but STILL! I feel sick now, and I don't know if it's the food, guilt or a combo of the two!

Plan your meals people!

Or you could end up like me... Not that that is a horrible thing, but tonight is not something I am proud of.

Refreshing Lunch

I spent the day doing laundry! How exciting! LOL. I did have a refreshing lunch. I currently do my laundry at my Mom's home, so when I was there today, she said she wanted tuna sandwiches. I love tuna, but I try to avoid the bread (even if it is whole wheat), just because I am trying to get the last of my weight off. No rush, but it's a goal.

So, I mixed the tuna with mayo and relish (if you haven't tried this, I definitely recommend it!). Then, she had some cheddar cheese as well as some cucumbers and tomatoes from the farmers market, so I chopped them up for us.

I took about 2 oz of the tuna (I say about because she doesn't have a food scale, but I must say, I have gotten pretty good at eye-balling and I do stop when I feel just right, so no danger there), 2 slices of the cheese, some of the veggies and put a lil balsamic vinegrette on those. It was a very satisfying lunch and protein packed!



If you were wondering, I had my pina colada protein shake this morning (see my post from Thursday, July 21, 2011.) As for a snack this afternoon, I am having a Crystal Sky Nectar Protein drink. Supper, I don't know yet... I will get back to you on that. ;)

Kabob's and Cheesecake!


I felt like red meat tonight, so I took out some frozen stewing beef this morning and let it thaw. Then I chopped up some garlic and tossed it in some olive oil for the marinade. I let it marinade all afternnon. Let me tell you, that flavors the beef really well.

I took the beef, some chopped up zucchini and yellow pepper and layered them on the skewers, tossed them on the grill and there you have it!

While the beef was marinading this afternoon, I got a little inventive. I have been DYING for some cheesecake... So I got to thinking and came up with this:

Lil Cheesecake:

1 package 1/3 less fat Philly Cream Cheese (room temp)
2 6 oz containers Vanilla Ciobani
1/2 package SF Cheesecake Pudding Mix
4 packets Splenda
2 Tbsp SF Vanilla Torani Syrup (Only had two tbsp left, so I added:
1/4 tsp Vanilla Extract
1 Graham Cracker Crust

Blend the cream cheese, ciobani, syrup and extract together until smooth. Then, slowly start to add the pudding mix. Once that is incorporated, spoon into crust. I then put it in the freezer for about 15 minutes to set and moved it to the fridge. I made a strawberry compote to top it off.

Strawberry Compote:

1 cup fresh sliced strawberries
1/4 cup SF Strawberry Torani Syrup
1 tsp Corn Starch
1 pad butter

Melt butter in sauce pan. Add other ingredients and cook on med-low heat until sauce thickens. Pour over your favorite dessert or French Toast.

Lazy Saturday...

I worked out a LOT this week... More than usual, to be honest. So, I am currently relaxing and indulging in a guilty pleasure-watching chic shows on tv (Dave is out of the house! LOL). I don't normally like to subject him to that kind of pain, so I make up for it when he's out and about and I am relaxing at home.

Anyhow, I did just have lunch. Kind of late for me, but I didn't have breakfast until 10:30, so lunch at 2:45 isn't too off. Tee hee.

Plus I had a Nectar protein drink about an hour and a half ago. THOSE are a yummy way to get in protein and water. See as follows:

16 oz water
1 scoop Crystal Sky Nectar
1 Individual packet of Fruit Punch Crystal Light
Shaker bottle

Shake all together vigorously. Wait 10 minutes and shake vigorously again (I say this because mine clumps a little sometimes, this seems to help). Then, enjoy a lovely fruit punch protein blast!

So, yea, back to that lunch. I went to a local Italian restaurant last night with the girls and I had a side Caesar salad and 1 slice of an appetizer pizza (margarita pizza). It was yummy, and of course, there were leftovers.

So, I had a slice of the pizza for lunch with some chopped cucumber and tomato with balsamic vinegar and a lil olive oil.

Quick, easy and yummy!



One of the things I love the most about items I picked up prior to surgery is their size. I bought some 8 inch plates and 4 inch bowls (as pictured above). Something about a full bowl or plate make a meal more satisfying to me, so try this trick and you may find it makes life a tad more enjoyable.

Tonight I am making beef and zucchini kabobs... The beef is marinading in garlic fused olive oil as we speak!!! BOOyah! Can't wait to eat that, gonna be delicious, plus I have farmers market zucchini, so it's going to completely rock. It's also the only way I can get Dave to eat his veggies. He hates "rabbit food". But he loves my grilled veggies. ;)

I LOVE Friday!!!

And this is why. I know, payday and the weekend, but I love Fridays because I know I will have some time to experiment with food! The best creations come from experimentation, so I encourage all of you to head to the kitchen and put on your chef hats!!! We'll see what we can all come up with and I encourage you to post it on your blog and I can't wait to see (ok, i lied, i can't wait to taste!!).

For today, I have made my chocolate covered strawberry protein shake:

1 scoop chocolate protein powder
1 cup 1% milk
1 tbsp sf chocolate fudge pudding mix
2 tbsp sf strawberry torani syrup
4 fresh strawberries
8 ice cubes

Blend all but the ice for about 30 seconds, then add the ice and blend for a good 2 minutes! Enjoy!

That was breakfast. I missed my snack, so for lunch I had gortons salmon and veggies. My afternoon snack will be cottage cheese on top of tomatoes and cucumbers. Num!!!

If you like Pina Colada's!

Then check this out!!! Yummy Pina Colada GOODNESS!

I miss me some rum luscious coconut-y sweetness, so I thought this up and voila! This morning the Lil Moon Pina Colada was born! Tee hee!

Ingredients:

1 cup 1% Milk
1 scoop Vanilla Protein Powder
1 tbsp sf Banana Cream Pudding mix (dry)
1/4 cup frozen Mango
1/4 cup frozen Pinneapple
1/4 cup Coconut Water
1 packet splenda
8 ice cubes

Mix all ingredients except ice in blender until blended well. Add ice and blend for at least 2 to 3 minutes. Pour and enjoy!!! I sipped on this puppy until 10 am!



So, that was breakfast.

snack: ciobani and 1/4 cup honey nut cheerios
Lunch: 1 cup of the rice and beans I had for lunch yesterday.
snack: 4 oz cottage cheese and sliced tomatoes and cucumbers
Supper: 1 cup cheesey veggie pasta
snack: Nectar protein drink.

So, a great food day (for what my doctor and nut prescribe post surgery). :) I am a happy girl.

Lovely food day!

Sorry, no pictures today, but I did have some lovely eats:

Breakfast was a Chocolate Banana Protein Shake:

8 oz 1% Milk
1 scoop your fav choc protein
i splenda
1 banana
1 scoop upcal d (optional)
8 ice cubes

Blend all but the ice for one minute. Then, add ice and blend for 2 to 3 minutes. Drink up! Takes me about two hours to get it down. Then I re-fill the bottle with water from the fountain at work. ;)

snack: Ciobani (blueberry) with 1/4 cup of Honey Nut Cheerios

Lunch: Beans and Rice (1 cup of the total recipe)

4 cups Brown Rice (cooked)
1 can black beans
1 jar Salsa
1 bag of shredded mexican cheese
2 tsp each chili powder and cumin

Combine all ingredients in sauce pan on med-low heat until warm. Serve.

snack: 4 triscuits and 2 oz New York Extra Sharp Cheddar

Supper: 4 oz Steak (grilled), 1 small ear of corn on the cob and 1/2 portabello mushroom cap topped with feta cheese (nom nom!)

Feta Stuffed Mushroom Caps:

2 large portabello mushroom caps
1 med yellow onion
1/2 cup feta cheese (I used original)
1/2 tbsp light olive oil
salt and pepper

Chop onion and saute in olive oil until softened. Place mushroom caps in pan, top side up, and wait 2 minutes. Then turn the cap over and sprinkle the feta cheese evenly on the inside of the tops. Cover pan with lid to allow caps to steam and cheese to melt. After about 7 minutes, caps are ready to eat! Be careful, they get VERY HOT! I burned my tongue, I was so excited, I forgot to wait.

snack: Haven't had it yet, but thinking possibly nectar or cheese and crackers? Might have a cup of V8 too. Need a bit more veggies.

Trying to get back to blogging

Hello peeps! I have been so crazy busy working on my wedding, something had to give. Unfortunately it was this blog! So sorry about that. I am still at it food wise, not to far off the path, but I do have my moments. So far, I just make sure I get back on the bandwagon that day and I don't give up for the whole day if I have a bad choice moment. With that being said, my hunger is up a little, I have been working out like crazy! Apparently, you get hungrier when you burn more calories (and thirstier!). LOL, I am such a dork.

Anyhow, today's food:

B: Choco-nana protein shake
s: ciobani with 1/4 cup honey nut cheerios
L: Grilled Cod with sauteed swiss chard and paty pan (I am not sure if that's what they're called). NUMMY! Next time I make this meal, I will remember to take pictures.
s: tomato, mozzarella and basil salad
S: Grilled chicken bacon ranch salad from McD's. I was desparate, but I could have done worse.
s: individual peanut pack and sf choc.
s: 1 cup smartfood
