Mmmmm, SOUFFLE!!!

Ok, so back in the day when I was reading all of Eggface's Blog (pre-surgery to help tell myself I would eat normal again someday after surgery), I saw her posting about these Protein powder souffle's and thought, yeah right, souffle's are supposed to be the most difficult thing to make.

I was SOOOOO wrong!

They are probably one of the best things I have had since surgery! OMG! They really do taste like chocolate coconut banana bread! I had mine right out of the oven and will have one in the am for breakfast tomorrow!

I made mine with this protein:



I went to the health food store next to my house yesterday and they were going out of business! It's so sad, but I totally scored on protein!!! I bought the above protein (the Dessert proteins are among my favorite's)! This one is Chocolate Coconut and I also bought a container of Chocolate Fudge.

In addition to those, I really scored on Nectar! I have the Strawberry Kiwi at home, and I love it. Lately, I have been having one scoop and one sf fruit punch packet (I have market pantry brand from Target) in 26 oz water for two of my snacks each day. Needless to say, I wanted to try another flavor (hence the reason I went to the health store in the first place) and I picked up two containers of the Crystal Sky. Oh my GOODNESS! It is soooooo good!!! YUM YUM!

Yesterday I was in the mood for Italian, so I broke out my Trader Joe's Grilled Chicken Patties and Garden Pasta (which a great friend told me about) and I made me some chicken parm with pasta. I eat 2 oz of the pasta which the box says is an equivalent of 1/2 serving of veggies. I guess this is one of those things that could be true or could not be true, but it is blended with Tomatoes, Spinach and Carrots. You can taste them in it, but not so much that you feel like it's not pasta, it still has a pasta taste. I fixed the Chicken Patty as the box said to, same with the pasta and topped them both with some Prego Trad Sauce and a lil Parmesan. I could only eat half (I was having a small pouch day).

Blah! It's been a CRAZY week!

I know, I am so sorry, been a few days. Crazy one's for sure. I have so much going on a work, I can barely make supper when I get home. Tonight we went to my DF parents for supper. His mom made a delicious pork and keilbasa thing of which the french name ecapes me. It was like a stew (with cannelini beans-one can pureed and one whole beans, tomatoes, garlic, onions, herbs, etc...). I had a cup of it. YUM!

Now I am home, having my final snack of the day, a mini pizza. Meh, it didn't come out so great, which stinks because in theory, it sounded awesome. I had made my Fiance Shrimp Scampi for valentine's day and I put sun dried tomatoes in it, so I had left overs of the tomatoes and I love those. They are a little chewy, so chew very carefully and I wouldn't advise eating them until you are a ways out from surgery. Anyhow, here's what I attempted:


It's a half a flat out sandwich roll thing topped with the sun dried tomatoes, pizza cheese, garlic powder and pizza seasoning. Toasted for about 3 mins. Like I said, it wasn't so hot. I think it needed some tomato sauce or something. I couldn't taste the tomatoes as much as I thought I would. If any of you come up with something better for the tomatoes, please, let me know!!!! I have more!

I also got my food together for tomorrow.

For breakfast I will have a Nectar protein drink. My friend Nan showed me how to make them taste really good! You take 24 oz water, 1 scoop of nectar (I have strawberry kiwi) and one crystal lite (or in my case, market pantry-Target brand) fruit punch packet. Mix well. NOM NOM!


So that is my breakfast and afternoon snack.

My am snack is Chobani and Crispix and lunch is 2.4 oz turkey breast (deli), 1 oz cheese and 2 oz pickles.

Dinner and last snack are tbd.





Oh, here's an updated pic of me. Dave took me out for Mexican on Sunday night for Valentine's day! He had the band sneak up behind me and they sang a beautiful song for us! He's so awesome!

Yes, I had one glass of wine. I was a little tipsy, but fine. My surgeon said it was ok.

Eats for a Lil Pouch

Posting the eats of the day! Oh, and unfortunately I did not win the Chili cook off, but I enjoyed making it and almost all of it went! So, I am happy! I will try again next year, though! ;)

Breakfast: SF Cinnamon Dolce Click/Body Fortress Hot Protein Drink
sn: 4 oz Vanilla Chobani and Cheerios
L: I will let you guess (hint, I had Chili)
sn: 1 oz cheese and some crunchy protein o's
D: 2 oz Pork and spinach
sn: Lil Pizza

Super Chili Cook Off!

So, I entered a chili cook off at work. I am really excited and hopeful to win because I personally think my chili rocks!

Here's how I made it, a little different than usual (this is a double batch, so if you're not feeding an army, cut the ingredients in half):

2 Boxes Chili Mix
Tub Hot Fresh Salsa
1 16 oz can Tomatoes (if you make one batch, you can still use the whole can of this ingredient)
2 16 oz cans Red Kidney Beans
2 2 pound packages 90/10 Ground Beef
2 8 oz cans plain tomato sauce
4 cups water

Cook the beef in a saute pan until no longer pink and drain the fat. Pour the beef into your crock pot (I know, why not just let it cook in the crock pot from the beginning, right? I have done this and the texture of the beef ends up being grainy instead of chunky). Add the remaining ingredients and cook on low or "keep warm" on mine, because low on the crock pot I have is like boiling! Not what I want.

It doesn't take long to be ready, but the longer you cook it, the softer the veggies in the salsa.

It is nice and spicy, but if you want less spice, sub the hot salsa for mild and leave out the Chili Powder Spice packets from the boxed mix. The boxed mix includes a packet of basic chili mix, chili powder for more spice, masa flour (a thickener-I like my chili thick, not soupy, so I use it) and a salt packet. I could figure it out on my own, but really, why trouble myself??? It just makes life a lil simpler, and who doesn't like simpler???? Really???

Lil Moon's Cheesy Chili Pizza!!!!

Today was a crazy day at work. I spent most of the day in meetings and only 2 hours at my desk working. That in mind, I was really tired when I got home, so I wanted something yummy, quick and chock full of protein! Oh, and it had to be something DF would eat, too. So, I made pizza's. His was on a Flat Out Wrap. I topped it with tomatoes, red peppers, onions, pepperoni and cheese. He loved it, gobbled it right up! Mine, I made use of some leftovers. I have a container with some chili in it from this past weekend. In my opinion, it came out a little dry, so I haven't been in the mood to eat it. So, I took it and made this instead:


Okay, so if this is something that people already do, please excuse me, but I am super happy I thought of this tonight! It was so good!

Lil Moon's Cheesy Chili Pizza

1/2 Flat Out wrap
1 oz Chili
1 oz Mexican Blend Shredded Cheese
1 slice tomato chopped
1 slice onion chopped
1 tbsp chopped red pepper

Pre-heat oven at to 350 degrees. Place wrap on pan and spread chili onto it. Add the veggies and cheese. Bake on top rack in oven for 11 minutes. Enjoy!

I had mine with a half cup of chopped tomatoes and red pepper. It was a nice balanced meal.

Tomorrow is another crazy day, but we're going out to supper with the future in-laws, so I don't have to cook. I do have to figure out what to eat once I get there though, so I will let you know what I had. Ciao!

Woman Pains...

Today I went to work and I swear I spent most of the day on either the phone with doctor offices or in meetings. Not that I am complaining. On to the food I ate today, then I will elaborate on the Doctor calls as I am sure it does not interest the male population...

Eats:
B: SF Cinnamon Dolce Click/Body Fortress Hot Protein Drink
sn: 4 oz Vanilla Chobani and 1/2 packet Oatmeal
L: 4 oz Chili and 5 oz Tomato
sn: 1 oz 2% Cheddar and 4 crackers (whole wheat)
S: 1 fajita and two bies mashed potatoes at Chili's
sn: Snickers Marathon Bar

Also, I am down another pound! YAY! No more plateau, for now anyhow!

On to the Doctor thing, so boys, if you're not interested, please refrain...

Ok, I don't know about you ladies, but figuring out Birth Control after surgery is an issue for me. I don't like to spend $50.00 on the pill each month, the shot is known for causing Osteoporosis which as WLS patients is already a possible problem due to malabsorption of vitamins and minerals. So, for me, the best idea was the Copper IUD. So, I called today and spent a bit of time on the phone with the receptionist finding out if I was covered and all that. Blah, blah, I went into their office after work to get it done. No biggie, right? Yea, no. I was in so much pain after, and the Doctor said he could take it out, but the pain is only temporary, so I should be fine by tomorrow.

I took a number of children's tylenol and had dinner. I feel a little better. I hope I feel a lot better after tonight. We have some higher up people coming to work tomorrow. I want to be on the ball! Right now, I feel like I have the worst menstrual cramps EVER!

So, I am going to take some more tylenol now and pass out. Goodnight everyone!

Verizon!

So, yeah, no cable, internet or phone yesterday and it's really late to post my day, but I figured I'd share. Also, no, my plateau has not broken yet. Gooooossssffffrrraaaaabbbbaaaaahhhhh...... Repeat, repeat, repeat!

Okay, today's eats, sadly sans pics... Sorry guys!

B: SF Salted Caramel Hot Chocolate Protein Drink
sn: Chobani and HN Cheerios (which is apparently the devil)
L: 2 oz Turkey Meatballs topped with a lil pour of red sauce and mozz (.5 oz-weighed on the scale) and 3 oz Summer Squash.
sn: 1.4 oz Cheddar Cheese (2% milk), 2 oz Honey Ham and 3 oz Cucumber
S: 2 oz Black Angus Steak with Portabella mushrooms, peppers and onions sauteed in a lil olive oil and water, topped with feta. OMG~ YUM
sn: Another salted caramel hot chocolate protein drink. So, yea, I am addicted to them. lol.

Another day, more plateau...

So, still keeping track of my calories like a crazy woman and almost had a panic attack thinking about going to my future in laws for supper (ended up cancelling, crisis averted, kind of-I should be able to deal with this at this point).

Daily eats:
B: Mocha Click Protein Drink
L: 3 oz grilled chicken and veggies
sn: Ricotta Bake and cucumbers
sn: 3/4 cup Honey Nut Cheerios and Honey Chobani
S: Gorton's Grilled Haddock, two fingerling potatoes (with one tbsp lite sour cream) and 2 oz steamed zucchini with pepper.


It was yummy. I am definitely not in an upbeat mood today. Sorry folks, it's one of those days. I have room for a snack later, I will update then. :)

Updated to add snack:
Trying to keep it low carb now, at lest until I talk to my nut... Here was my evening snack and I topped out at 1236 cals for the day. Not too shabby!
Feeling a lil more uppity.

2 oz Hillshire Farms Oven Roasted Turkey Breast, 1 oz Cracker Barrel Extra Sharp Cheddar made with 2% milk and 2 oz cucumbers.

Mmmmm, PORK!

I am a huge fan of the pig. All those tasty parts! Yum.

So tonight, I took out the pork tenderloin that I bought at the market last night and threw it on a pan with some veggies that I chopped up and tossed in salt, pepper and a little olive oil and into the oven it went. The tenderloin was already marinated (I believe this one was apple somethingorother). So easy and fast! You can't beat it!

Here's hot it looked on the way into the oven and then on my plate. I had a 1/4 cup side of Pasta Sides (Parmesan flavor). It was delish and of course my Fiance loved it. I am starting to think there isn't much he doesn't like.... LOL





As for the rest of my day:
B: Salted Caramel Hot Chocolate (see Bariatric Foodie for the recipe)
sn: Honey Chobani with 1/2 cup Honey Nut Cheerios
L: Chicken and Gravy with roasted veggies
sn: Soy Crisps and Hummus

The snow here is so bad, they sent us home early today, then told us we don't have to come in until 11 am tomorrow! Thank goodness! I am not a fan of driving in the snow, not because of me (I think I am a great driver in the snow), it's the COWBOYS that think because they have big trucks or SUV's they are invincible and should ride every one's YOU KNOW WHAT! URGH! Moving on...
